I love the Appalachian Jack, and my sister swoons over the Rosemary.

This cheese is a divine substance. On days when I'm in too much pain

to cook, I pretty much live on it.

My favorite is the Appalachian Jack Select (their

Select cheeses are aged longer, I think they say at

least 6 months, and I love the additional complexity

of flavor). The Pepper Jack has a nice smoky hint

from the chipotle. The Blue is great, too - very,

very intense flavor, a tiny bit goes a long way. But

honestly, every kind we've tried is fantastic, and I

like to order a variety.

The only way I think it could be better is if they

used unrefined sea salt instead of plain salt.
