Hi Bianca, Do you have an opinion about salt? I don't really like the taste of cheese much without it (Landmark's " raw " no salt cheddar). But I will probably get used to it. No earth salt of any kind and most sea salts were just a joke. Email me privately and I will send you a source of cheese made with celtic sea salt. Or you can just try to acquire a taste for no salt cheeses as WWTL recommends. Gerson and Vonderplanitz are big on no salt, and Gerson specifically said so in regards to cancer. But I have had no problems with the celtic variety.
