Cutting out all refined carbs will make a huge difference by itself, as will switching to eating only the right fats and plenty of them. I went to one a few leeks ago (I live in metro Phoenix) to look for some coconut oil (which I found) and when I browsed their meat counter I saw every imaginable part of animals for sale, even the cow's feet (don't know if they were from calves or adults). Since I already had stock in the frig I didn't stop to ask questions. They even had chicken's feet, they didn't look like they had any bones in them though so I don't know if they would be any good for stock or not but I'll throw some in next time anyway.
