OK, Explain this!

My uncle who has been diabetic for some 30 years and I had this discussion

early in the day about how come we seem to have such variations in blood

sugar when eating habits are basically the same from day to day.

Today, I ate Thanksgiving dinner about 2:00 in the afternoon, nearly two

hours after my usual lunch time.

I test glucose twice a day as recommended by my physician (average is around

104 since I started four weeks ago).

Anyway, I decided that I would at least have enough of the foods I like to

taste them, ate turkey breast probably 3 ounces, a very small scoop of mash

potatoes with a very small amount of gravy, some green bean casserole, some

raw vegetables (cauliflower, cherry tomatoes and carrots) which I ate

sparingly but out of politeness to the relative who thought they were good

for me and I ate one roll after deciding not to and then deciding that it is

a once in a while occurrence so I'd eat it slow and savor it.

This evening about 6:00 I took my blood sugar and it was 76!!! That is the

closest to hypoglycemic I have been in the past four weeks, I did notice a

second of dizziness when I got out of the truck at home, but didn't think

anything of it.

I am not on a super low-carb diet, have had small amounts of pasta, rice,

cereal all with no real effect on the blood sugar but was surprised that it

should drop so low after I ate a few things in one meal that normally if I

were going to eat them would have been the lone starchy food in the meal,

for example, here at home I don't mix potatoes and bread, or at least I have

not done so in the past few weeks, and I would not have eaten raw carrots at

the same time as I would have eaten the bread either.

My mother-in-law, also diabetic says that for her it isn't so much what she

eats but how much. My servings today were very small except the roll which

was the normal size.

Breakfast was an egg on a slice of whole-wheat toast.

Dan, I know you will be cringing at my meal, I can't help that, but it

appears that it didn't have the expected effect on me. Don't worry, I

nearly fell off my chair once to hear your breakfast so, I guess we are even

(big smile).

No, I didn't touch the pie, even though I baked a cherry pie that it appears

no one touched so had to bring it back home again. My husband will enjoy

it, although I may sneak one or two small bites in the next couple of days.

Has anyone heard of a product called Splenda? My uncle brought me two boxes

of it, it apparently is a sugar product, but he says diabetics can eat it.

I have not heard of this before, but if it isn't as awfully sweet as

aspartame I will be happy--I am having one heck of a time with most

sugar-free products that use aspartame, it seems to me that it is about 100

times sweeter than sugar and that really annoys me.

Any way I can get chocolate that won't hurt me in small quantities? It is

all Mom's fault, she talked about chocolate ice cream, pie and such all the

way home today--just to torture me I think.
