Currently I'm thinking of ways to substitute for high carb foods. Last night, I ate at a Vietnamese restaurant, eating lemon chicken because I knew it was served over shredded lettuce and rice. I think omitting rice altogether and using finely shredded lettuce would make a good substitute. I think thinly sliced eggplant could easily replace lasagna noodles, if the liquid was also cut back. Below is an item I copied because I was trying to think of a replacement for pasta - besides spaghetti squash. What do you think? Nutrition: Are Soba Noodles More Nutritious?
