Cream cheese has a low carb count, but watch out for cottage cheese, some is high, some is not, depending on the brand and how it was prepared and how much of the lactose is converted. You have to read labels, or have them read. One semihard cheese that is out is the delicious gjtoast, a Scandanavian goat cheese that is sweet and wonderful, and has 12 grams of carbs per ounce, far too high. Yes, I have heard cc or cottage cheese is a tricky one. Also sliced cheese or American is processed. American cheese is not bad, but perhaps not for the induction phase of Atkins. Many cheese spreads and cheese food products can have elevated carb counts, they must be looked at individually. Land o' Lakes American is pretty low in carbs, Kraft singles are a bit higher, but not bad. You can make a delicious snack with the single American slices. Break a slice in fourths. Find a heatproof dish or platter and spread the plastic the cheese was wrapped in on it and lay the squares of the cheese on the plastic. Microwave on high for about 50 seconds to a minute and 30 seconds, depending on the power of your microwave.
