I use it mainly for cooking as it hardens at room temperature. (Jen eats raw food for lunch but cooked for dinner.) Does that mean I can use any kind I want? The cheapest I found is made by an Indian company in Queens. It is $4.99 a quart. Sound like that would be fine for cooking and compared to over $20 a quart a bargain. I use coconut milk with a high fat content for eating uncooked but the Thai kitchen brand I was using just added a filler and 2 additional carbs a serving to their product so I need to find a new one. Any ideas? I can't use that for cooking as it has the solids which contain carbs and protein that I don't want to add to my cooked dishes for the keto diet. The water issue is a big one for me. I have a Brita filter but I don't trust the water it makes-no real reason just turns me off. If I knew for sure it was good water I would drink it. I like spring water but don't like paying for it. I don't want to install any kind of gadget in my home unless I am positive it will work. As a result we don't drink enough water so I really appreciate this discussion.
