My coop sells " Hill Farm of Vermont " Sauerkraut that looks like the real deal AND it's organic with celtic sea salt as the only other ingredient. It is very crunchy, but not as salty as Bubbies. On the label they say that they do not heat it and that the flavor improves over time as the kraut is under continuous fermentation. You can even order it by the gallon!
