Here is a message I received from Meadow Creek Dairy regarding how their

cheese is processed. Looks like we have some truly raw stuff here (with

the exception of Mountaineer)!

The highest temperature reached is during the cooking of the curd for

Mountaineer, a swiss type. That curd is cooked to 117F. All other cheeses

are cooked to 100F or below. We do not heat treat so the milk itself is

not heated.
