Sunflower/Pea shoot question

There was a potluck at work today and they had two of those big party platters

that comes with cheese cubes, pepperoni, etc. These trays look like they would

be a good size for starting some shoots. I having been having fun watching

Melodys videos and want to try these also. I'm guessing it's okay that they

don't have holes for drainage. I could put a towel over them to make it dark

and I will find something to weight it down with for the first 24 hours. I know

I have to soak the sunflower seeds, do I also soak the peas? I am going to put

them in some organic soil as that is what I have for now. I will experiment

with other things later. Thanks all for all your help.
