I haven't tried kale chips but got a recipe for them at Craig one day.  I

have heard others say they are good.  Just sounded like a lot of trouble to

do.  I like sweet potato fries with a dipping sauce of honey-mustard dressing

or sweet-sour sauce.  My husband can't have them, but he probably couldn't have

kale either.  I do like kale to eat.  It was the edible green of my childhood

as I didn't like spinach the way my mom made it.  I like turnip greens too but

they are sometimes too chewy or stringy.  I haven't tried collards at all

yet.  Haven't tried dandelion greens either but I've heard they are good in the

spring.

Friday evening for dinner, rather later than my normal dinnertime, I had radish

greens from my windowsill along with alfalfa and broccoli sprouts and mung bean

sprouts, with my own homemade wine vinegar and olive oil. That, along with

fresh wild mushroom and onion stirfry. A light supper, right? Ok, well that

'light supper' gave me so much energy, I was up at 4 am!! I went to bed around

11 or so and jumped out of bed with more energy than I've had in weeks. And the

only thing different was the sprouts.

I have to get a minimum of about 80 grams of protein a day, and my

iron/hemoglobin has been too low to 'spin' when giving blood. I think I've

found my new protein/iron source. That, and kale chips. Yum!!

I love kale chips!  I dont eat potato chips & the kale chips give you the

" crunch " that I miss from potato chips!  Of course there isnt a green that I

dont like!

Do you make your own or buy them in a package?  i think i'd like to try them

before I try to make them.

Yes I make my own!  I just cut my kale put in a large zip lock add about 1 or 2

T. olive oil & some nutritional yeast & shake!  I have a dehydrator & put them

in there till crunchy... Very easy!  there are so many recipes online for them

also .. i just wing it :)

Recipe I saw put them in the oven.  I don't  have dehydrator.  i think salt

was added to them.  Don't remember oil but sounds good.  I keep olive oil and

grape seed oil on hand, as well as canola.
