Guest guest
You can do it in the oven at 400 degrees for about 4 minutes. You can cut the cheese into thin strips and make shapes (xmas trees, snowflakes, handprints etc). Amy Waters What are your snacks??? How about posting what you use for snacks. Here's one of mine In the past people have commented about needing something CRUNCHY!!! I know I have that problem. I love popcorn and chips, but they don't love me. They will throw me off a good diet all the time. This is something I make from my days in Atkins. " Fried cheese " aka " Cheese crackers " It works with any " real " not processed cheese. My favorite is mozzarella. Cheddar works too, and pepper jack is great this way. Use a heatproof plate. Spray with a cooking oil spray for the first one. Put a 3-4 finger handful of shredded cheese on the plate. Cook in microwave 1.5 - 2 min . Use a knife to pop off the plate. There should be enough residue oil for several more. It will be dark brown and very crispy when cooled. Plain cheese works well as a cracker or as a sub for tostadas. I just had some for lunch with nut butter on top. I also like to sprinkle a little spice mix on the uncooked cheese to change flavors - Garlic powder, Spike, Mrs. Dash etc. I know this is maybe not the most NT recipe but it's not too bad, especially if you have good cheese. There are olive oil cooking sprays, and it would probably work to just melt a bit of CO on the plate too. Some of you don't like microwaves, but I'm not sure how to do this by any other cooking method. There was a low carb book that had you fry the cheese in a small frying pan. I never could get it to work that way. Carol K

Mostly for tacos (Even though I eat some grains now I still prefer cheese shells to anything else). I cook them on med - med high heat. Sprinkle shredded cheese into a circular pattern on a heated non stick pan.......it will take awhile....but let it cook until it starts to firm up. Flip with a spatula until firm and slightly crispy on both sides. I then bend it over something (while still hot) and let them cool for a minute or two in a taco shape. Fill, and eat. The first time I cooked them, I thought it wasn't going to work because the cheese just sat there bubbling. You just have to be patient and then all of the sudden it will start to harden up and lift from the pan. _________________________________________________________________ Check out the coupons and bargains on MSN Offers! http://shopping.msn.com/softcontent/softcontent.aspx?scmId=1418
Guest guest
Hi Carol, Here's one of my favorite snacks: I grind up some walnuts (you can use any nut but walnuts are my favorite) then grind up a couple of dried figs (Calymyra are my favorite)then melt some butter and mix it all together. Adjust all ingredients to taste. More figs for sweeter, more butter for richer (Kerry Gold is wonderful for this). I've sealed this into plastic pouches for yummy traveling food (great to break out when in an airport and surrounded by nothing but junk for miles of concourses. -- *YUM* What are your snacks??? *YUM* *YUM* *YUM* How about posting what you use for snacks. Guest guest
I had a brand new small non stick saute pan, and it was very marginal at best. Guest guest
I guess I will have to try it in a pan again. I know 1 of the problems the first time was the cheese. The cookbook had recommended a good quality Parmasian (sp?). But after it was cooked it was soo salty it was almost ineatable. I also may not have cooked it long enough as it was still a bit rubbery rather than crispy. Carol K > > I have cooked cheese in a nonstick fry pan several times.
