How about posting what you use for snacks. Here's one of mine

In the past people have commented about needing something CRUNCHY!!! I

know I have that problem. I love popcorn and chips, but they don't love

me. They will throw me off a good diet all the time.

This is something I make from my days in Atkins. " Fried cheese " aka

" Cheese crackers "

It works with any " real " not processed cheese. My favorite is

mozzarella. Cheddar works too, and pepper jack is great this way. Use a

heatproof plate. Spray with a cooking oil spray for the first one. Put

a 3-4 finger handful of shredded cheese on the plate. Cook in microwave

1.5 - 2 min . Use a knife to pop off the plate. There should be enough

residue oil for several more. It will be dark brown and very crispy

when cooled.

Plain cheese works well as a cracker or as a sub for tostadas. I just

had some for lunch with nut butter on top. I also like to sprinkle a

little spice mix on the uncooked cheese to change flavors - Garlic

powder, Spike, Mrs. Dash etc.

I know this is maybe not the most NT recipe but it's not too bad,

especially if you have good cheese. There are olive oil cooking sprays,

and it would probably work to just melt a bit of CO on the plate too.

Some of you don't like microwaves, but I'm not sure how to do this by

any other cooking method. There was a low carb book that had you fry the

cheese in a small frying pan. I never could get it to work that way.
