Guest guest Posted January 27, 2004 Report Share Posted January 27, 2004 NT book has a lot of excerpts from different books on how polyunsatureated oil like vegetable oil can raise your cholesterol but saturated fat like butter and coconut oil doesn't. I haven't been using any vegetable oil for cooking (but I do eat out at times, so who knows what kind of oil is in these dishes). I do most of the cooking with either virgin coconut oil or expeller pressed coconut oil. I also eat chicken skin and beef/pork fat too. Overall, I am eating more fats in general. Although I feel more comfortable eating like this, I cannot help but wonder what is happening to my cholesterol level. I think all the media hype on anti-fat for the last two decades is still in my brain cells somewhere. I know I should go get the panel done myself but I haven't yet. Has anybody gotten a lipid panel done before and after the change of diet from polyunsaturated to saturated?
