Guest guest Posted January 24, 2004 Report Share Posted January 24, 2004 Since I've become something of a Longhorn addict, telling everyone the joys of Longhorn, a response I often get is: " Well, that sounds good, but have you ever tried Buffalo? Buffalo is FANTASTIC!!! " . In the interests of science, I've tried to find people that have eaten both Longhorn AND Buffalo, but have not come across anyone. So, today I purchased a ridiculously expensive Buffalo steak, and cooked it as I would my Longhorn. My testing group (me and my DH) both agreed it was pretty good, and certainly tasted like beef. Grassfed beef. However, it was somewhat tougher than my my old Longhorn, definitely took some chewing! Mind you this was from a supermarket, so I don't know how it was aged etc. Anyway, since I don't have an easy source for it, I'm not really tempted anyway, but I think the Longhorn is more tender and has a better flavor. I think both of them are better than your average beef steer, though good grassfed beef certainly isn't bad. Just my opinion. Of course, I'm biased and really I'm being paid off by the Longhorn Association Lobby Group. Another opinion: a few days ago I tried some " cubed steaks " from the Longhorn. I didn't know that they could even DO that, but the butcher offered. They basically pulverized some of the steaks with teensy knives, to make your average " cube steak " . I tried making them chicken-fried, and they were rather nice. If you are having a steer custom-butchered, you might look into it! They were extremely tender and would make good " lettuce burgers " (we don't do hamburgers, lettuce makes such a nice crispy bun ...). -- Heidi Quote Link to comment Share on other sites More sharing options...
