I think about this everytime I make stock, but I don't know the answer. For me, I use a lid part of the time, but in the end I usually try to let as much water evaporate as possible so the stock will take up less room in my freezer, especially when I have a huge supply of carcasses at one time like in deer season when I get them from my local butcher shop for free. I was in a stock-making frenzy recently and I have enough for several months! (I eat soups several times a day too.) One other thought is that leaving the lid off might help with keeping the temp low if you're having a problem with that?
