Haha! The nice thing about the kimchi recipe, or any recipe for that

matter (except for baking - that's chemistry) is that the ingredients

are merely suggestions. You don't have to put hot peppers in kimchi if

you don't want to. I, otoh, put hot pepper in everything, including

the 18 lbs of sauerkraut that I made in Sept.

You should experiment with hot peppers. Generally when someone tells

me they don't like hot peppers, I assume that the only experience

they've had with them are the ones in movie-theatre nachos. :-)
