ORAC (Oxygen Radical Absorbance Capacity) is the anti-oxidant activity a particular food has in a test tube. For a while i thought that certain fruits had the highest ORAC values (highest antiox activity) -- prunes, blueberries, raspberries. But coffee, tea, and cocoa have ORAC scores three-times higher than any fruit or vegetable and have shown, in numerous studies, to be protective of health. Do you feel that coffee, tea, and cocoa have a part in a tradtional diet? I do not recall them being mentioned too often in Nourishing Traditions. Does fermentation improve ORAC scores?
