fern, i think *more* salt -= less bitter, not less. but i'm not certain -

maybe heidi can comment.

mostly red cabbage, garlic, scallions or leeks, carrots, red radishes,

ginger and cayenne. in the batch i just made, i also added arugala and

yellow chard. i must say it's the most beautiful, colorful batch of kimchi

i've ever seen! it is a mixture of deep vibrant greens, red, scarlet,

orange, yellow and purple - all ingredients organic, and some local.
