Some folks are more sensative than others though. I react to small amounts, the rest of my family doesn't ... so they don't worry about the minute amounts, which makes life a lot easier. Arrowroot is ok, as is tapioca, potato flour, rice flour, sorghum, and any of the " gluten-free " marked mixes from Bob's Red Mill. Quinuoa is ok, but spelt is not. Corn starch is ok (and is good to add to recipes for lightness). A lot of things are contaminated ... oats being the big one. Oats are basically ok, but they usually contain a small percentage of wheat (because they grow together and the grains are about the same size). Corn is often ground on the same machines as wheat, so corn meal is iffy. Masa and Arrowhead mills corn seem to be ok. Bob's Red Mill corn is NOT ok, they grind it on the wheat stones. Malt is NOT ok, it almost always is barley malt. " Modified food starch " may or may not be ok, it is usually from corn but may be mixed. The site www.celiac.com probably has a good list though. -- Heidi

For what it is worth, me too. Both my kids were born with lousy teeth ... which NOW I figure out I could have avoided easily. However, since we went GF we have very few temper tantrums or other such issues. -- Heidi Jean
