Guest guest Posted October 23, 2006 Report Share Posted October 23, 2006 MammaNess I have been brewing KT for a while now and had occasional fizzy batches, but only every 3rd or 4th batch. Recently, all my batches have been beautifully fizzy. I suppose this could be because my scoby has gotten more mature (but it was 10 inches across and 3/4 of an inch thick of layers when I was given it this spring), but personally, I think it is all down to the tea I am using to brew. I was using green tea. Now I am alternating between 2 different teas: - Formosa Oolong - Apricot & peach - which is a black tea blend with peach pieces, orange petals and safflower petals. This produces a beautiful pale golden KT with lots of fizz and a gentle slightly sharp peach fruity flavour. - Ceylon & Sencha - Caliph Blend - black & green teas mixed with rose petals and pussytoes. This also produces a pale golden fizzy KT with a fruity flavour reminiscent of mangoes & lemons. I get my tea blends from: www.cupoftea.uk.com I have also started a 2nd brewing pot, and am using Pu'erh tea (a black tea which has a very red colour and which is supposed to be especially healthy) for that - it has a slightly sulphourous scent but tastes good. It makes a rust coloured KT. Not every batch of that is fizzy, but over half of them are. So, if you want fizz, why not try a new blend of tea and see if it makes a difference. In my experience the tea blends which have some flower petals in seem to make fizzy tea most of the time. Jasmine tea is easy to find, you could always start with that?
