Compared to other gluten-free collections, the ingredients vary a lot with each recipie. So if you're looking to avoid ingredients besides gluten, you'll probably find something here. Soaking the grains/flours overnight in buttermilk would make these good NT recipies. http://www.bobsredmill.com/recipe/ In the categories menu, choose gluten free. Well, I'm surprised at the number of " low carb " bread recipes I come across made with whole wheat flour. I think the idea is that they are more low carb than white flour recipes. So I imagine because those ingredients AREN'T white sugar or white flour, they're considered " low carb " ? No idea really. I guess it's just another example of the way everything gets undermined, corrupted and destroyed. Reminds me of Atkins warning people to stay the heck away from sugar alcohols like maltitol -- until he started selling spurious low-carb products made with sugar alcohols like maltitol. Of course, it may not have been Atkins as much as those involved in his company. Who knows.
