RE: Katja's fudge

Uh, wow Katja, I just made " almond joys " this afternoon before I read your

response, which is basically what you call fudge. I soak almonds for a

couple days in the fridge (peeling them is so fun :-P), and add meat of half

a coconut, a few dates and some carob. I have a small food processor I use

to grind it all up. Voila, healthy candy! I will try it your way with the

oil too. Do you refrigerate and cut? We make little bars out of the

mixture.

*** well, i'm totally novice, but i make this " fudge " that is coconut oil

(softened), coconut, and finely ground almonds, and vanilla or cocoa. i

just take my soaked and dried almonds and toss them around in a coffee

grinder for a while, and presto! finely ground goodness.

i'm sure there's a better way to do it, but i *have* a coffee grinder...

exactly! that's just what we do.

and to be clear - it's not actually my fudge. i'm pretty sure ghislaine

brought me the recipe. (she'll correct me if i'm wrong!)

*laughs* I'm correcting you now. You gave me the recipe so I'm not

sure where it came from. The copy you gave me had nothing to

identify it's origins, though it must have been online or though e-

mail.

I've actually been meaning to ask you something about it. You had

made to two batches and I liked the one that ended up being thicker

because it was in a deeper bowl. I'm wondering if that was the batch

that had some raw butter in it along with the coconut oil. Those

batches had chunks of almonds in them so I assumed that you hadn't

ground any up finely either. heh, maybe I'm thinking of a different

recipe entirely.

nono, you're right. it's been different every time. :)

i did varying chunkiness of the almonds, but it's good to always get SOME

extra fine to thicken it up.

one was with raw butter and one with coconut, i think the deeper dish was

the butter. once i mixed half butter and half coconut and that wasn't so great.

HEY!! i just remembered - it was michele's recipe, is that right?

Here's the recipe I use for fudge at:

I vary it - sometime put in some peanut butter or a variety of chopped nuts,

but the almonds are chopped fine. I have a little hand held processor that

works very well - a Braun, I think.
