Then put into the fridge? or differently? > >Jafa Just add some kefir to some cream and let it set on the counter. I use about half a cup of kefiili to a quart of cream. I used to use the grains ... they work but they are hard to retrieve out of the thick cream! And yeah, I put it in the fridge once it is " done " . It seems to keep forever though, I had some for 2 months once and it separated a bit but once I stirred it, it was fine. Never seems to mold. The one that was sitting 2 months I decided I wouldn't use (that was before everyone discovered they love kefir cream, now I keep running out) I made into " kefir butter " which is actually rather good.
