Using a lid creates an anaerobic environment which leads to Alcohol content

instead of vinegar. Im not sure what it will do to the scoby.

You know, I think this is a myth. We do secondary brewing, put the brew in

airtight bottles for several days before drinking. My partner and I both

know what alcohol feels like, and we both agree that's not what we're

getting. In addition, SCOBYs form in the bottles, which means the bacteria

are still quite active, and the bacteria are what convert the alcohol to

vinegar. Then there was the woman in Belgium with the 15-year-old SCOBY in

a bottle that she finally took out and it started a new brew entirely on

its own, which again speaks to the fact that the bacteria are quite able to

survive in an anaerobic environment.

The main thing that people have found is that there needs to be an airspace

in the vessel or the brew doesn't go anywhere. One of the moderators here

brews with a lid of some kind on his vessels, and he has said that daily

lifting has given the brews enough air exchange. But if you just put a lid

on and didn't lift it, I suspect the brew wouldn't advance much. But I

don't really know. Lizzie, have you tried this?
