That latter range of options does not, frankly, sound very appetizing at

all, but then your tastes are rather more unusual than mine, so who knows,

it might work for you, though I'm pretty sure it won't yield anything that

tastes much like curry.

Well, from a purist's perspective, creme fraiche might actually work

better, because straining the yoghurt significantly intensifies the

sourness. I don't remember rogan josh being nearly this sour (though I

don't remember the dish especially well beyond knowing it was one of my

favorites some years ago) but regardless of whether my version is faithful,

I love it. It's going to take a lot of self control to stick to one bowl a

day -- and to not stuff myself and cut down on the number of bowls I can

get out of the batch. If I have the time, I'll post the recipe I used

tomorrow, but the main deviation was my already-described yoghurt trick.

Well, I do it all the time. I use kefiili cream and kefiili in much

of my baking ... has lots of neat flavors, and it doesn't

separate as regular milk does. It's no problem to make extra ...

Please do - I have no idea what rogan josh is, but it sounds interesting.

Oh, I do, I do!!! Especially one that someone refers to as having to

force himself not to eat it all at once!

Delicious indeed!! If I eat Indian, it's the only item I order because it

is so so very delectable!! Is someone going to share a recipe? I'd love to

have it.

Well, being the annoying person I am, I figure if we just keep this topic

going, will get so tired of being nudged or whimpered at that he'll go

ahead and find the time to post his. Besides, I feel a serious stew

mood coming on, so I have a vested interest.

It's more like a very heavy sauce with morsels of tender lamb meat. It's

delicious - good over jasmine rice.

Ach, I'm a moron. Already had a good recipe for rogan josh. So, ,

you said the only thing you did differently was the yogurt trick?

(Must retrieve Mike's comments about possibilities, too, out of my vast

trash bin)

Basically yes, but I also didn't boil the stew down to thicken the sauce,

so it stayed more like a stew than a sauce. I will be posting about it,

though, just probably not today.
