Guest guest
Mike- >I can think of a lot of >variations of the concept, from making everything else conventionally >and mixing it at serving time like you're doing, to sprouting and >grinding the spice seeds and/or marinating/fermenting them (possibly >with veggies) in the kefir for the other extreme of 100% raw. That latter range of options does not, frankly, sound very appetizing at all, but then your tastes are rather more unusual than mine, so who knows, it might work for you, though I'm pretty sure it won't yield anything that tastes much like curry. >Definitely report on your experiment. >Can't see how it could go wrong. It's hardly different than the NT >suggestion of adding creme fraiche to soup at the last minute. Well, from a purist's perspective, creme fraiche might actually work better, because straining the yoghurt significantly intensifies the sourness. I don't remember rogan josh being nearly this sour (though I don't remember the dish especially well beyond knowing it was one of my favorites some years ago) but regardless of whether my version is faithful, I love it. It's going to take a lot of self control to stick to one bowl a day -- and to not stuff myself and cut down on the number of bowls I can get out of the batch. If I have the time, I'll post the recipe I used tomorrow, but the main deviation was my already-described yoghurt trick. -

I use kefiili cream and kefiili in much of my baking ... has lots of neat flavors, and it doesn't separate as regular milk does. Guest guest
It's more like a very heavy sauce with morsels of tender lamb meat. It's delicious - good over jasmine rice. > RE: /uncooked yogurt curry > > > At 11:35 AM 2/25/04 -0500, you wrote: > >> It's an Indian lamb stew made with yoghurt. Guest guest
Ach, I'm a moron. Already had a good recipe for rogan josh. So, , you said the only thing you did differently was the yogurt trick? (Must retrieve Mike's comments about possibilities, too, out of my vast trash bin) MFJ Any moment in which you feel like dancing is a perfect moment. Guest guest
- >So, , >you said the only thing you did differently was the yogurt trick? Basically yes, but I also didn't boil the stew down to thicken the sauce, so it stayed more like a stew than a sauce. I will be posting about it, though, just probably not today. -
