I use the coconut from Wilderness Family Naturals and since it's so sweet already, I don't add any sweetener to my macaroons. My DH loves them. For me, they're a nice protein snack. I have a hard time throwing stuff out. This topic has come up several times on this list and last i recall, the best advice was to toss them. I have egg yolks in my smoothies every morning for brekky and I confess to mostly just throwing the egg whites away. I tried Sally's meringues a couple of times but they didnt work and were a hassle - I think I don't have the oven for it. Any other suggestions? Filippa ============= Filippa, I use egg whites for baked concoctions. When whipped to a froth first by an eggbeater, they can be mixed with any kind of batter to increase fluffiness or height. Many flourless cakes are made using only eggs. The " cakey " consistency is strictly from the beaten egg whites. For instance, when I make chocolate mousse brownies, I first mix egg yolks with melted chocolate and liquid (but cooled) coconut oil. Then I mix that with beaten, fluffy egg whites. It makes a glorious batter that is then baked. The finished product, cooled, is very much like a brownie. If I have extra egg whites from someplace I add them -- it simply makes the entire batch lighter. This is a wonderful solution for people who don't want to eat grain (gluten sensitivity) but who'd like " bakery " products now and then. You can also add extra egg whites to scrambled eggs. They don't have as rich a taste then, but are extremely light. Finally, in Chinese cooking they coat raw shrimp (and other forms of animal protein) in egg whites and spices and refrigerate it before sauteeing.
