Guest guest Posted February 28, 2004 Report Share Posted February 28, 2004 One of my favorite ways of cooking meats and some veggies is by gently simmering in coconut milk (usually flavored with curry, saffron, etc.). Yesterday, as I was making breakfast, I noticed a quarter can of coconut milk in the fridge, and, on a whim, I simmered four eggs in it, scrambling the whites ('cuz I don't like those blobs of raw egg white) and leaving the yolks intact and runny. It was the weirdest egg dish I've ever made, but it was really delicious. The only seasoning I used was a dash of RealSalt. Quote Link to comment Share on other sites More sharing options...
