It doesn't matter if you open the jar. My Mom says her grandma had a kraut

barrel on the porch, and they just reached their hands in and took

handfuls for snacks ... typically the kraut barrel didn't have a sealed top,

just a loose cover and a plate/weight to hold the kraut down.

Once it is nice and sour it's pretty indestructable, though they do recommend

not opening it too often (playing it safe, I'd guess). I've never had anything

fermented go BAD but sometimes it gets REALLY SOUR and maybe gets mushy

(not crisp).
