I'm thinking of contacting your >supplier to either order the skin, or perhaps just cracklings. and here's another skin question - cause i'm not yet an expert on all things pork there's two methods of butchering a pork - one involves scalding and the other skinning. and i know there are rules about what they can do with various parts if they use one method or the other. does anyone know about those rules?
