(alternately, you can use finely chopped nuts here - also quite tasty) bake at 350 till golden-brown. chill. in a bowl over a pan of boiling water, wisk the egg yolks and the bit of honey until they thicken. this takes a bit of time, so be patient. i like to get it off the heat as soon as possible, so as to cook the eggs as minimally as possible. pop this in the fridge. whip up the cup of cream, and add it to the yolks. if you're using raw cream, sometimes it just doesn't whip up too fluffy. that's fine, it just makes a " soupier " pie. still tastes great. whip the egg whites till they're very fluffy. add in vanilla. wisk them into the bowl of yolks-n-cream. pour everything onto your " crust " , and chill overnight. voila! sooo tasty! i have found that some days, it just will. not. set up for me. i can't figure out what makes the difference some days and not others, except the degree of whippiness i get in my cream. but it never seams to matter - it's always tasty, even if we have to use a spoon. macaroons: egg whites leftover from whatever i was doing with the yolks (generally smoothies). beat them till their good and fluffy, add in vanilla. add in some arrowroot (a spoonful or so) and lots of handfuls of coconut (i just love coconut). you can spoon these onto a sheet for individual 'roons, but i don't have stainless cookie sheets yet, so instead i spoon the whole mess into a glass pie plate and bake at about 300. it comes out as a GIANT macaroon, which is fun, but usually we break it into pieces or cut it like a pie. bake it for a while (30 min) if you like them crispy, just a bit (15 minutes) if you like them chewy. i've been thinking of adding fun things to them too, like cocoa or berries... -katja Quote Link to comment Share on other sites More sharing options...
