and i'm sooo glad you liked the bacon! :)

here it is:

2.5 lbs boneless lean pork, ground

1 lb fresh pork fat, ground into above

..5 lb ground veal

..5c fresh parsley, finely chopped

2tbs salt

2tbs pepper

2tbs crushed fennel seeds

2tbs crushed red pepper

1tsp gound thyme

4 crumbled bay leaves

..5 tsp allspice

..25 tsp nutmeg

mix all together!

shape into patties or roll for slicing. makes 4lbs. may be frozen up to 3

weeks without flavor change.

to bake, place in baking dish, bake uncovered at 350 for 30 minutes or

until browned, turning once.

Thanks! All pork and fat works fine for this recipe if anyone objects to

veal or doesn't want to search it out.
