Does anyone have any recipes using brazil nuts? > > Rebekah @@@@@@@@ In a recent post Helen has made bold claims for the delectability of brazil nuts prepared ala NT, no different than any other nut; I haven't tried it myself, though I have often soaked them and eaten them wet with no lack of satisfaction. Just be aware that brazil nuts are extremely concentrated in selenium, which is a great thing, but if you ate a handful everyday you could overdose on selenium. I have been eating a daily brazil nut or two for the past two years in the fashion of a " vitamin pill " , except on days when I eat other foods very rich in selenium, like kidneys. As far as recipes, I'm sure you can adapt other nuttyness to them... Personally I use a recipe that I've successfully adapted to a great many food items. It is deceptively simple on paper: (1) Lift food to mouth (2) Chew food. I've discovered that I like nuts better if they are not completely dried so they are hard all the way through. I usually dehydrate them about 24 hours.
