dairy/meat jewish dietary laws

I had ice cream (homemade of course) after my steak for dinner tonight. Then

wondered if I should be stricter about not having dairy close to meat because I

have low iron. Dairy inhibits absorption of iron right? Then it occurred to me

that maybe this is why Jewish laws forbid consumption of dairy with meat. Then

I remembered I had marinated my steak in kefir (which made it very tender btw).

I guess that wouldn't have any effect on iron right? or would it?
