I made the fish sauce from the NT recipe. It looked really awful sitting there

on the counter for three days, but the resulting liquid was not unpleasant. I

used it to make the NT ketchup recipe which was such a big hit that I have run

out of fish sauce and will be making more this weekend.

has anyone tried fermented fish sauce ever ? we didn't have whey so

we used some successful beet kvass to culture it. i have never tasted a

real fish sauce and nor do i know how a successful batch of fish sauce is

supposed to taste and smell like. now it looks like a jar of purple, fishy

water...with some smell...

I made the fish sauce, but let it sit in the fridge for about 10 days before

making the ketchup with it. She says the fish sauce is supposed to only be

good for a few weeks in the fridge. Does that mean I only have a few days

to eat my ketchup?

Wow i missed that. Guess mine is okay we ate up the first batch of ketchup with

2 week old fish sauce and the second batch is half gone made with 2 month old

fish sauce. Oh well nobody is sick or complaining so I guess we will just keep

eating it.

I can't say for homemade fish sauce, but the stuff I buy at the Asian

store lasts forever, and it specifically says not to refrigerate it.

It smells just like " Alaskan fish fertilizer " , which has warning

labels not to eat it (it is " live " ) .... but when we had a dog indoors,

the dog would always eat the dirt if it had fish fertilizer on it,

so it must have been really tastey!

I personally love the fish sauce, of course it is full of garlic and spices. It

is fishy but then I like CLO. I put fish sauce in salad dressing and on eggs.

I doubt it. Isn't the ketchup fermented a second time? I imagine the

ketchup lasts more or less indefinitely like other fermented products.

hmm, i think it's been there for three days. so i think i can throw away

the fish pieces and strain the liquid (or not? )and refrigerate it ? do i

keep the lemon rinds and all that ?

I strained mine and put in fridge. The ketchup is even easier to make.

I don't know how long the ketchup will last. We ate up each batch in just under

three weeks. Bye-bye Heinz. LOL

Hi Jo,

Yeah, I would've tried it! It's supposed to stink! I haven't played

around with fermented fish yet (except the generous amounts in my

kimchi...)

Hmm, maybe when the 17-year Brood X hits this spring I can try a

cicada variant of fermented fish sauce...
