As far as giving up dairy, I'd definitely stick with kefir instead of giving it up altogether. That way you're isolating a more specific variable, which will be more helpful in the long run since it's not a health *emergency*. But maybe you're just relying on dairy too heavily? Perhaps just cutting down a bit would make a difference? I guess if it were me I'd first keep everything the same but cut the quantities in half or something. If it gets better, then ratchet the dairy back up (just in time for spring pastures?) and if it stays better then life is cool. If not, then switch to kefir-only... Of course, all this is pure speculation and you're obviously doing incredible things for your family's health, the GF thing and the quality of the food and everything. And maybe it's just a matter of extra-vigilance with the gluten, ala Heidi, and some patience if it is in fact a residue of previous gluten stuff... Who knows, but I agree with Deanna that you shouldn't feel guilty about very uncertain conjectures!
