I think it would be very mild ... mine has more juice.

I don't know about whey vs. grains ... I'd guess they

would be pretty similar. However, my " hooch " has

the same probiotic bennies as kefir, as near as I can

tell (both make massive difference in my " output " ).

Possibly more because the hooch isn't quite as filling

so I can drink more of it.

I use kefir grains mainly because they are *easier* ...

straining kefir to make whey takes time, scooping a

grain out is easy and no need to replace it for 6 months or so.

I also leave the dregs at the bottom of the crock to

jumpstart the next batch ... you get a nice little

batch of yeast at the bottom.

I'm in the process of making myself a nice big " crock "

of unglazed clay which will hold the yeasts and bacteria

in it's pores. I think unglazed clay .. even bisqueware ...

is the best for fermentation. Right now I have a glazed

crock and it works awfully good too. But don't feel

it's needed ... even my plastic hiking water bottle worked

ok.

Yeah, kefir whey has most of the probiotic benefits of kefir, more

than the curds; you don't need to do a second round with the grains!

If you put the grains in you'll get something closer to water kefir,

maybe half strawberry water kefir and half kefir whey, but it's all a

continuum and there's plenty of probiotic benefit to any variation on

these things... The strawberries will increase the alcohol content a

little, but your drink is essentially kefir whey and that's an

amazing substance... I love the flavor of kefir whey plain, much

more than clabber whey...

man, heidi. you better hurry up with your experimenting. i was saving up

for a harsch crock, but now i've realized that i need a whole SHELF FULL of

crocks! quick quick, so i can send you my money! :P

Well, the good news is I talked to a professional and she can make them

en masse for a lot less than I thought, and a lot quicker. I made some, but I

have to wait for the next firing, so it's going to be SLOW ... but she fires

every weekend, it seems. So she's making some testers.

Personally I'm really getting excited myself ... if these work, it will

be darned easy, maybe easier than the Harsch.

It might be cheaper to buy a crock at a farm auction sale. I have

about 8 of those antiques in my house that I use for garbage

containers. They are really cheap too and still good!
