I am hoping that some of you seasoned Nters can tell me about the falafel recipe, where the chick peas are apparently fermented. The technique is boiling water poured over them in succession with a 12 hour spread, then add whey or lemon for another half day. It's on p. 506. Hmmmm. My question is what is the difference in nutrient value between this method and using sprouted chick peas. And which method do you think is preferable, and why? Thanks to those of you in the know!
