Perhaps if you incubated the culture for long enough you could achieve a 99+% reduction in lactose the way you can with incubated 24-hour yoghurt, but I doubt anyone's done any tests to find out how long you'd have to ferment and at what temperature. - Quote Link to comment Share on other sites More sharing options...
