I'm adding the brands I used because I think quality makes a difference: Mix 1 1/2 c. virgin coconut oil (Organic India VCO from WFN) 2/3 c. coconut flakes (Woodstock farms, organic, which is not sweet whatsoever - if you use WFN coco flakes, you may want to cut down on the honey) 1/2 c. almond slivers (organic, don't know brand - I buy in bulk from my local HFS) 5 Tbsp. cocoa powder (Green and Black organic cocoa powder) 4 Tbsp. raw honey (Really Raw Honey) Mix in food processor until well combined. I wanted to save some out without the PB or butter, so I spooned out about 6 lumps (6 Tbsp.) onto a flat dish. Add 2 1/2 - 3 Tbsp. butter (I used Kerry Gold) to the remaining mix. Mix in well. Then I spooned out about 6 Tbsp. of this onto the dish. I then covered the dish and put it in the fridge. (For those who may not like PB.) Next, add 3 tbsp. peanut butter (I used Maranatha organic crunchy) and mix in well. Spoon into ice cube trays and freeze. You can probably refrigerate and it will be fine, too. I've also used hazelnut butter and those were my previous favorites, but the peanutbutter/butter ones are the best I've had yet. They are quite addictive, in fact. P.S. I LIKE them with 4 Tbsp. honey, but some folk put a lot less honey. You have to experiment til you get it where you like it. I don't see any reason whatsoever to go lower on the honey for myself though, other than I have on again off again candida issues. But as far as healthfulness of the " candies " (which I call cocoa coconut fudge - because it has a similar consistency and taste) I think the honey *adds* to the nutrient density. I was thinking however, to maybe make a " low honey " batch for the undereating phase of the WD, and eat the regular recipe (above) for dessert. I don't see any rationale for going low fat during the undereating phase, but I understand the low sugar rationale. Suze Fisher Lapdog Design, Inc.
