Re: macaroons dressed up and other successes

A while back i asked this list what to do with my leftover egg whites and

macaroons were suggested. So i made those with gobs of shredded coconut.

They were pretty good but not the least bit sweet (in fact, next time i will

make a savory Thai version), so here's what i did: I melted a bar of

Rapunzel 70% chocolate with a splash of milk, then iced the macaroons with

some chocolate. They're pretty good now.

On another front, i made my first successful batch of mayonnaise with no

food processor. I hate the food processor and never use it. I took a tip

from my fave cookbook, La Leche League's Whole Food for the Whole Family,

and used my hand blender in a mason jar. Blend the egg mixture for 1 minute,

then add the olive oil gradually and blend a lot. Easy, easy, and a nice

thick mayo!!!

Looks like my 1/2 cream, 1/2 milk yogurt came out pretty good too. All in

all, a successful day in the kitchen.

Don't ya need 3 hands to do that! LOL, You got to hold the jar while

you use the hand blender then use your 3rd hand to pour the olive

oil...slowly.

no, i pour in a little, blend...back and forth. Worked fine. I poured in as

much as 1/4 cup at a time.
