They are smoked and can be eaten without cooking. I'm guessing this makes them raw, which is a good thing, but aren't smoked meats carcinogenic? They're awfully tasty. They're awfully tasty. >Elaine There are some carcinogens in the smoking process, or so I've heard, but you gotta figure our ancestors lived in a LOT of smoke! Which may be why we crave the flavor. I think a bigger problem is that most " smoked " foods today also are full of nitrates/nitrites. I love traditional German farmers's sausage, but I'm guessing most delis use nitrates. I asked one butcher if they could make nitrate-free sausage and they said they were afraid to, they didn't want lawsuits. It's pretty easy to grow botulism germs in sausage if you don't do it right. My Kefir-jerky is about as close to jagerwurst as I have been able to get, with no preservatives other than what is in kefir. Tonight we had smoked chicken ... I used the " Chinese chicken " recipe, boiled the chicken then butterflied it and put it on the water smoker. It turned out very good. Water smokers are nice in that they give you the smokey taste, but the temp is rather low, so there are not so many carcinogens. Guest guest Posted April 12, 2004 Report Share Posted April 12, 2004 I'm pretty sure they don't use nitrates because he said they smoke overnight, but i didn't know to ask so i will next time and just enjoy them until then. They are good on-the-go snack. I'm going to find some veal and have them make bratwurst and kalbskeise (?) for the kids. Elaine > Elaine, What a smart idea!
