I finally found a company that sells *real* stock over the Internet. They

claim " We are the only company in the WORLD producing true stock

reductions naturally in large volumes. " It was mentioned in this months

" Cooks Illustrated " magazine.

Each 1-lb frozen brick is %75 reduced stock and they recommend

reconstitution at 5 to 7 parts so that is 5 to 7 pounds of stock (8 pounds

is 1 gallon) reconstituted, or keep reduced for sauces. Each brick costs

about $14 with a $75 min order for 5 bricks. I think you can buy

individual bricks through distributors.

Assuming you thin it out, $14 for a gallon of stock is IMO very

affordable. To make fish or veal or lamb to buy the bones, vegetables,

mirapox and the time and effort is not cheap, or easy.

They use only bones and meat and mirapox with no salts or other

ingredients or preservatives. This is pure stock, reduced and frozen and

vacuum sealed.

Stock options are Fish, Veal, Chicken, Lamb, Pork.

The website is a little difficult but click on the FAQ for info how they

make the stock it is pretty interesting. The " Gourmet Center " button is

where you order .. website really needs some help.

I just ordered some. My past experience with buying stock is it is never

as good as home-made but I'm going to give this one a try. Probably not

from organic/grassfed animals is the major drawback but the time and

effort of making fish or veal or lamb stock at home at least this way its

available.
