Guest guest
Hi NTers I'm most heartily recommending " The Whole Beast: Nost to Tail Eating " by Fergus . Yes it does have lots of offal, and for the converted there are lots of new ideas. Not another liver and onions but you'll find: Roast Bone Marrow and Parsley Salad, the restaurant's signature dish 4 recipes for lamb's brains (they are delicious, if you can get them) Pig's trotters, tails, head, ears... etc And a fair amount of 'normal' recipes like deviled crab, grilled mussels, veggies, etc. Batali of foodtv fame has written a heartfelt plug for the book jacket and even reviewed it on amazon.com. cheers,
