Is there a lot of kneading of the dough in sour dough bread? I have the option of looking into a mixer that can handle mixing the dough. I have problems with my right shoulder and left elbow (I know pretty limiting), injuries mainly from a car accident (not my fault, but it doesn't matter, does it). My husband or son help with a lot of stirring (stir fry, etc.), or mashing (beans for refried beans). I understand that making bread with yeast is a different process than sour dough bread making, probably with the kneading also. I don't have experience with making sour dough bread. Would it be silly (unnecessary) to get a mixer that kneads the dough or is it a wise investment for me? I can probably knead it a little with my arms, but can't handle a lot of kneading. I do want to make it regularly, so it needs to be a do-able thing on a regular basis. What do you think, guys/gals?
