This writup doesn't say it specifically, but in another I read, they used purified wheat gluten. That is, just the protein, no carbs. Purified wheat gluten is used as a protein source in a lot of animal (and vegetarian people) foods. It doesn't have any significant amount of carbs. The other study compared wheat gluten with casein, and hydrolyzed casein. The hydrolyzed casein did NOT cause T1 diabetes, but the " raw " casein did. Further, they have found with kids that react to wheat gluten, taking away wheat gluten (but not carbs in general) causes the antibody that causes T1 diabetes to go away. Not all T1 diabetes in humans is related to wheat though, and taking away gluten doesn't help the ones that are NOT sensitive to gluten. In any case, it seems to be related to allergenic proteins, not starches.
