Guest guest Posted April 27, 2004 Report Share Posted April 27, 2004 hello-- I'm just beginning this NT stuff. i already eat raw milk, good eggs, and pretty good meat, and whole grains. But now on to phase two. For me i have to start out slowly and surely, understanding and mastering one concept at a time, and incorporating it into my life. Otherwise it won't stick. So my question is about whey and grains. All grains need to be soaked, but do they need to be soaked with raw whey only? Or is water good enough? The Brown Rice Pilaf recipie doesn't have the rice soaking at all. And i have a limited supply of raw milk, and would rather save it for drinking and not use it to make whey. So if i make whey from pasteurized yoghurt, will that make the various drinks and tonics? Like beet kvass or barley water. I have more questions, but i want to get good at soaking my grain products and also make some lacto-fermented drink. After i get good at that, then off to the next step. Even better than raw milk is raw milk keifer--this produces whey as well (I mix it back in and drink, but you could probably drain it off and use and then eat/drink the keifer as well--no waste). I think milk-sensitive folks use lemon or vinegar instead of whey to soak And yes, whey from past. yogurt works fine--get the whole milk, plain kind--do you have a source for good yogurt like Hawthorne Valley or Seven Stars Farm? Where do you live? It sounds like you are on the right track--keep at it! I know NT can seem overwhelming and expensive at first, but it's sooooo worth it in terms of your health and enjoyment of food. Have you attempted stock yet? ----- Original Message ----- ..
