Guest guest Posted April 27, 2004 Report Share Posted April 27, 2004 so much for low-carbing today!! i had these leftover potatoes just staring at me in the fridge (i'd made fried potatoes for my inlaws this weekend) and i just couldn't hold out any longer. so here we go: a small handful (3?) of red potatoes, boiled with the skins (course, wasn't someone saying the skins are bad?) two eggs some cream toss it all in the blender until it's a very thick ...um... " sludge " . fry in butter and salt (they fry a little slower than regular pancakes, or i was just impatient) for sweet pancakes, shred in apples. for savory, shred in cheese! boy, they were tasty with butter and the very smallest bit of honey! -katja Quote Link to comment Share on other sites More sharing options...

I don't know that they are " bad " per se (ok, here we go again :--) but sometimes, esp. if they are green, they can contain a toxic substance. And some people wonder about pesticide residues in the soil. If folks find potatoes bother them, the first thing I'd try is peeling them. Thin-skinned potatoes (like the red ones) are better that way than the Russetts, I think. I used to always eat the skins myself, but lately since I have more finicky people around, I find it easier to peel them.
