potato pancakes

so much for low-carbing today!!

i had these leftover potatoes just staring at me in the fridge (i'd made

fried potatoes for my inlaws this weekend) and i just couldn't hold out any

longer. so here we go:

a small handful (3?) of red potatoes, boiled with the skins (course, wasn't

someone saying the skins are bad?)

two eggs

some cream

toss it all in the blender until it's a very thick ...um... " sludge " .

fry in butter and salt (they fry a little slower than regular pancakes, or

i was just impatient)

for sweet pancakes, shred in apples. for savory, shred in cheese!

boy, they were tasty with butter and the very smallest bit of honey!

That was me ... I don't know that they are " bad " per se (ok, here

we go again :--) but sometimes, esp. if they are green, they

can contain a toxic substance. And some people wonder about

pesticide residues in the soil. If folks find potatoes bother

them, the first thing I'd try is peeling them. Thin-skinned potatoes

(like the red ones) are better that way than the Russetts, I think.

I used to always eat the skins myself, but lately since I have

more finicky people around, I find it easier to peel them.

The pancakes sound tasty!
