Guest guest Posted May 19, 2004 Report Share Posted May 19, 2004 ohmigosh, i just stumbled on the tastiest recipe! it's *just* *like* oatmeal raisin cookies, but gluten free! it's ...well, ya'll all know how my recipes are. so if you need more precise measurements, we'll figure it out: equal parts finely chopped almonds and shredded coconut. let's say a cup of each. an egg (though i think two eggs might be better, i'll try that next) a soupspoon or so of arrowroot a scant half a soupspoon of rapadura/honey/whatever a darned lot of raisins, yum vanilla enough softened butter or coconut oil to turn this whole mess into cookie dough. i dunno, half, 3/4 cup? spoon onto a baking vessel of your choosing and bake at a cookie temperature (350/375ish) for a cookie amount of time (10-20 minutes) delish! Lots and lots of cinnamon! This is what I did, it's only slightly more precise: 1 cup each almond flour and finely shredded coconut. 2 eggs heaping soupspoon of arrowroot flour. sprinkle of stevia At least a tablespoon of cinnamon (can you tell I like it?) a couple heaping spoonfuls of coconut oil. Spoon onto a cookie sheet and bake at 350/375 for 10 minutes. They came out pretty good. Could have been a little sweeter, but I wanted to be super careful not to put too much stevia in.
