I don't know if they are contaminated or not, they seem to be ok though. Currently they still don't process much wheat in Japan and some other parts of Asia. I really haven't found much difference in the exotic flours ... I use tapioca, rice, potato, sorghum, which pretty much covers it. However, instead of potato flour you can just use mashed potatoes, which is cheaper and easier sometimes. That's how you make lefse ... add a *little* of some kind of other flour to mashed potatoes. That makes nice tortillas too. I think using mashed yams would be good too. Yams (sweet potatoes) are REALLY full of good stuff. You can buy lotus root, stew it, and mash it if you want to experiment with that.
